The nutrient loss of raw walnut is the least, and fresh
walnut kernel acquired without drying in harvest season is more delicious.
Walnut is known as longevity fruit, and rich in protein,
fat, mineral substances and vitamin. Walnut kernel can reinforce kidney and
strengthen “yang”, tonifying lung and
relaxing bowels. The fresh walnut has abundant vitamin E, which can reinforce
liver and kidney, and delaying senescence.
New walnut kernel is white, clean and
tender, and tastes good. It tastes better when used in dishes.
For longer preservation, you can
directly break fresh walnut, and remove green skin; then seal the walnut kernel
by plastic bags, and place to refrigerating chamber. In this way, walnut kernels
can be preserved for over one month.
