Peanuts
are delicious. When we enjoy peanuts, however, we should pay attention to
safety. Peanut is the crop which is easily infected with aspergillus flavus. Experts
believe peanuts may infect with aspergillus flavus during growth and storage. It
is publicly known by scientists of all countries that aspergillus flavus is the
strongest cancerogen found so far. Its physicochemical property is quite
stable, and cannot degrade in human body but can only deposit in liver cells.
When deposit rate of aspergillus flavus is beyond tolerance of human body, it
may damage liver and even induce liver cancer.
Actually, the aflatoxin pollution of peanuts is not that
terrible, because rare peanuts are affected by aflatoxin, generally lower than
one out of ten thousand, and those affected can be distinguished. As long as we
pay enough attention, we can be assured to enjoy flavor and nutrition of
peanuts safely according to our own tastes, and get away from carcinogenic risk
brought about by aflatoxin in peanuts.
How to eat peanuts in the safest way? (1) Observe the color when
purchasing, and buy peanuts (kernel) with bright color, full kernels and
perfect appearance; do not buy peanuts with mould or darken color because they
may contain aflatoxin; (2) store in dry environment to prevent from mould, but
do not expose under blazing sun; (3) remove and rinse mildewed ones before
cooking; (4) cook by a scientific way, and the boiled way is the safest; (5)
spit when tasting foreign flavor.
