In recent years, great achievements have been made in the planting, production, processing and export of walnuts in Xinjiang, but there are still bottlenecks such as backward processing technology and equipment, low product quality and poor function, and low comprehensive industrial benefits, which restrict the high-quality development of the walnut industry in Xinjiang.

The Project will focus on breaking through three core problems in the walnut processing. Firstly, the intelligent integrated processing technology of raw material pretreatment may solve the problem that walnut raw materials can not be constantly and automatically cleaned and produced at present, which can significantly improve the quality of walnut with shell and walnut kernel; Secondly, the evaluation technology of walnut processing quality, the selection of special varieties for processing and the refining and grading technology of walnut kernel are constructed to improve the quality of walnut kernel, particularly the rate of white kernel; The third is to break through the joint production of walnut oil and protein and the intensive processing technology of a series of high value-added products, extend the shelf life of walnut oil, improve the solubility of walnut protein, and lay a foundation for the the development of high-quality and high value-added walnut downstream products.
